Since this is my first dinner post, let me start off by telling you that David and I are are old people and eat dinner at 4:00 pm most days. David gets off work at 2:00 pm, we work out and then we’re hungry and we decide that dinner is up next on the agenda. I don’t really like eating dinner too much later anyways, so this works for us. Our friends think we’re crazy. So naturally, I began cooking dinner today at 2:30ish (go ahead and laugh, I’m almost embarrassed to admit this). I stumbled upon a GREAT blog last night called Biochemista and there was a great recipe for a healthy taco salad with dressing . I saw it last night and couldn’t wait to try it.
The taco salad was pretty normal with a mix of shredded lettuce, lean ground turkey, taco seasoning, black beans, corn, tomatoes, and an onion, but the dressing was new. It consisted of 2 parts greek yogurt, 1 part salsa (I used a black bean and corn salsa), 1 tbsp. red chili pepper, and 1 tsp. cumin.
I was unsure what to think of the dressing but it was fantastic and HEALTHY all at the same time. If you’re feeling bored with this, add avocado and a sprinkle a lil bit of mexican cheese on top.
Tonight, I think I’m going to watch that new show “Expedition Impossible.” I’ve been seeing previews about it for weeks now and they finally intrigued me.
