Tonight at the Damron household, it was my turn to make dinner (our afternoon meal). I decided to go to Whole Foods (AKA Whole Paycheck) and get us some tequila-lime chicken breasts to go along with some homemade pico de gallo and black beans. I wasn’t really in the mood to get crazy in the kitchen. I think this Phoenix heat is wearin’ me down a little bit… I’ve been extra tired lately.
Anyways, I grilled the tequila lime chicken… super easy because the nice man at W.F. marinated it for me and with my handy chopper, I diced some onions, tomatoes and cilantro. I heated up some black beans on the stove, added some mexican spices and voila… dinner was ready.
Easy peasy dinner that’s healthy and satiating.
I think tequila-lime might be my newest favorite flavor of anything that’s supposed to be salty (think chips and meat)!
The final product… David approved. Check.
Off to get some serious work done with my Communications class because it’s almost OVER!! WOO HOO
