Today we have a midterm in Biochemistry and it’s one of my classmates birthdays, so I thought I would just go ahead and bring treats for both occasions, so I was in a frenzy trying to find something new to make that wouldn’t take away too much studying time. I perused Peanut Butter Fingers and saw this little gem, pumpkin spice cookies. With only two ingredients and pumpkin in them, I couldn’t resist. I think I’m so ready for fall now that I’ll just eat my way there will all the pumpkin flavored foods out. These are the easiest cookies to make ever and, like Julie on her blog about her husband, my husband loved them too! Win-win for all:)
All you do to make these is combine a can of pumpkin (or if you have the 30 oz. can on hand, 1/2 of that) and a box of spice cake mix. Stir
and stir and stir until all the bumps are gone and voila (I’ve been saying that too much), you have done the work. Then, just dabble a spoonful of batter on a GREASED cookie sheet and bake them at 350 degrees for 10-12 minutes. Julie, with Peanut Butter Fingers, also added cream cheese frosting, but I didn’t do it, so either way.
Okay, so serious talk. I have decided that it’s time to clean up the diet a little bit with this said, Pleasant Peach is going to keep me accountable as well as you guys! I feel like I’ve been eating too much (not particularly indulgent), just too big of portions and too often. I’m going to try to get back on track today!
