I’m really hungry as I’m creating this post, so consider yourself warned that there are some food porn pictures that cause salivating and may or may not cause you to fall off the diet bandwagon.
Tomato, Basil, Parmesean Soup made in the slow cooker. It’s hot in AZ right now, but for some reason, I’ve been craving soup. Maybe I’m getting my body ready for Minneapolis and the SNOW I’m supposed to endure this weekend. Recipe here.
Since I still live in Arizona and we are able to wear sandals practically anytime of the year, I thought these were really cute. The rest of the country can wear them too since summer is on the horizon. I love Sperry boat shoes and I love these too!
Tropical No Dairy Avocado Ice Cream. When David and I got engaged, we first went to the avocado festival and got some avocado ice cream and it was delish! That’s not a flavor that comes along very often though. This recipe is more of a tropical flavor with pineapple and lime flavors, but also adds in vanilla beans and coconut milk. This is ice cream that I can eat (due to no dairy), so I’m making it someday. Recipe here.
This is where the inhibitions of your diet might start to decline a bit. Here we have vanilla pudding cinnamon rolls with cream cheese icing. There is not one part of that recipe that is not my favorite food! We only live once and this could be moderation. Create this here.
Lemon-Blueberry Yogurt Loaf. I’m a sucker for dense breakfast breads. I think because my grandma always had them at her house and I’ve eaten way more loafs of these things than I even want to know! Sweet Pea’s Kitchen has several really good looking breads, but this recipe is found here.
Black Bean Avocado Salad. It’s also no secret that I love eating all these foods combined. In fact, it’s probably my favorite dinner when there are aspects of black beans, avocado, cilantro, and tomatoes, so this is indeed perfect! Check out Flourishing Foodie’s recipe here.
Here we go again with the avocado, but I really can’t get enough. Maybe I’m hungry and my body wants fat because every recipe with avocado looks stunning. This mango and avocado salad was on Babble the other day. When I get a kitchen back, I’ll make this one too!
Perhaps my favorite moment of the week was Otis swimming. We’ve taken him several times to this park and he was scared to death to swim. We tried several things to get him to swim, but I finally got in with him and walked him to the edge and then pushed him in and he was set. In fact, he didn’t want to come back. We went two days this week and I felt like a proud parent. It’s the funniest thing watching him swim. It makes my heart melt.
That’s my favorites for the week! We’re in Minneapolis this weekend visiting my sister, her husband, Dave and my mom is meeting us there. It should be a great weekend. I hope you all have a great weekend as well!
