This week has felt like a whirlwind to me. Due to the holiday on Monday, I barely know what day it is! We have had lots of celebrations going on since Sunday also — going away party, birthdays and a gender-revealing dinner for another friend. I had school all day yesterday and today, so I’ve barely been home either… Wheeew. We also have friends coming into town this weekend, which I could be more excited about.
I made a recipe a couple of weeks ago that I totally spaced off sharing – ground turkey and veggie sloppy joes. I adapted my recipe from Julie at Peanut Butter Fingers. I really LOVED adding apple cider vinegar to the ground turkey. For some reason, apple cider vinegar really resonates with me (and the more the better)! Veggie are always a nice addition to traditional recipes as well. I thought these had a lot more flavor than traditional sloppy joes.
Ground Turkey and Veggie Sloppy Joes
- 1 chopped green pepper
- 1 1/2 cups chopped broccoli florets
- 3 chopped green onions
- 1 pound ground turkey
- 3 1/2 tablespoons apple cider vinegar
- 3/4 cup ketchup
Sautee green onion and green pepper on medium heat in a pan sprayed with cooking spray or with olive oil until onion begins to become translucent.
Add broccoli to the other veggies and cook for approximately two minutes
Brown the ground turkey and drain the fat in a separate pan
Add the browned ground turkey to the veggie pan and mix together
Add ketchup and vinegar, stirring to coat beef and vegetables
Add more or less ketchup and vinegar to desired taste
This was so good it’s making me salivate right now thinking about it. I guess I know whats on my food horizon. It’s also great for leftovers, which is a big bonus at my house. I like to cook dinner and the next day’s lunch in one punch!
