This is going to be a quick post because I’m running late! This weekend I found some pre-made polenta in my in cupboard and started looking up recipes for what I could do with it. I figured out that people actually made polenta pizza and decided this would be a good start for me. This meal was ultra simple and quick for hungry tummies. You can either make your own polenta (which is what I’ll do next time) or buy the pre-made polenta.
Pre-Made Polenta Pizza
1. Preheat oven to 425
2. Cut polenta into 1/4″ slices
3. Place on greased baking sheet and put in the oven for 10 minutes
4. Top the polenta with pizza toppings you desire
5. Put the polenta pizza back into the oven for another 10 minutes
This definitely is different than regular pizza, but I think it fills a nice void if you like polenta.
This morning I got in my Insanity pure cardio workout. It was a tough one. After the warmup and stretching, there is 15 exercises done for one minute each that is completed before the final stretch. It doesn’t sound that intense, but it definitely gets my heart pumping and sweat pouring.
